Coming soon: 400° Gourmet Burgers and Fries

My inbox buzzed this morning with news about David Fink’s new gourmet burger concept coming to Carmel later this year. It’s official: 400° Gourmet Burgers & Fries will be opening in the Carmel Plaza this spring.

Why 400°? The star of the new restaurant will be a custom-made cast-iron griddle produced by the Montague Company, the oldest hand-crafted stove company in America, based in Hayward. 400° is the optimal temperature for searing burgers on cast-iron.

The menu at 400° is being developed by chef/co-owner Jason Balestrieri, better known as the executive chef at Cantinetta Luca.

Here’s the full scoop:
Situated on the prime corner just off Carmel’s Ocean Ave. at Mission and 7th, the 2200 square-foot restaurant’s dramatic and modern features will include red tile accents in the kitchen, stainless appliances, Artemide light fixtures, 15-foot two-story tall windows and ceiling to create an open and contemporary aesthetic. Counter and table service will be available and customers may choose to dine indoors in the comfortable dining room or outdoors on the dog-friendly patio. With convenient entry right off Mission Street, 400° will also offer street parking and short-term parking for to-go pickup.

David Fink, Founder and CEO of Mirabel Hotel and Restaurant Group, is known for bringing stylish luxury to Carmel, evidenced through properties such as L’Auberge Carmel/Relais & Chateaux, Aubergine and Cantinetta Luca restaurants and the recently opened Salumeria Luca. Of 400°, Fink says, “We are excited to offer locals and visitors a fun and casual dining option, using only the best ingredients, right in the heart of Carmel. We chose the name because a 400-degree cast iron griddle is the perfect heat conductor for locking in flavor and creating our delicious signature burgers. What could be better than a perfectly cooked burger with all the trimmings and a glass of local Pinot Noir?”

Yeah, my mouth just started watering! I’ve always thought the Monterey Peninsula is ripe for a truly gourmet burger shop, like Adam Fleischman’s super-successful Umami Burger down in LA. I’m counting down the days until 400° opens for business!
