New popup restaurant Füd is bringing attention to culinary stars working behind-the-scenes, hosting a prix fixe dinner from sous chefs from some of the best restaurants in town each month.
Füd debuted at East Village Coffee Lounge last week, offering a meal prepared by John Knight, sous chef at Roy’s at Spanish Bay.
With coffee-infused tequila cocktails and coffee-brined duck, served with a mole made with Acme’s coffee, dinner paid homage to the coffeehouse location. From the mofongo to the mole, Chef Knight delivered a sophisticated take on classic Latin American dishes.
Sure things were a little rough around the edges, but the popup concept was a welcome addition to our local food scene.
Diners sat at large communal tables, encouraging us to get to know our neighbors. Chef Knight came out after each course to explain the dish and his inspiration.
At the end, he joined us for a lively discussion, taking questions from diners eager to replicate the duck’s chili rub or the bacon hot chocolate. It felt like we’d been invited into the chef’s home.
